What's For Lunch?

Red Snapper

If you're living in the Caribbean, a Sunday lunch is a grand event.  I remember my Father cooking for what seemed to be hours making, callaloo, stew chicken, stew pork, baked chicken, rice and peas, provisions(sweet potato, dasheen, etc.), macaroni pie, fresh mauby to drink, some sort of a salad and his famous stuffed sweet peppers.  But as long as all that took, because, HE is a perfectionist, everything had to be cut perfectly so, everything was timed perfectly, and in the end, the presentation and tastes were well worth the wait.

What Caribbean meal have you eaten that just made your tastebuds melt?
