Snacking elevated

Mi amore is a vegetarian of Scottish descent, I am not. I'm a carnivore, give me meat, however, since we've been together, I think he's slowly beginning to change me, ever so subtly....I'm looking at what he does even more so, lol. j/k, but seriously....*side-eye*

Anyhoo, one of the many things I love about him is his healthy snacking. Our snacking consists a lot of various nuts, fruits, veggies, water, vino etc.

Recently, we picked fresh tomatoes from the garden and he proceeded to make a mouth watering snack, or as I call it, a deconstructed caprese salad, with a twist.  Salad as a snack? Uh, yes, salad as a snack!

  • A handful of cherry tomatoes
  • Fresh basil (yes, from the garden) 
  • Goat cheese
  • Balsamic vinegar  
  • Olive oil
  • Parmasean cheese  
  • Olives to garnish  
  • Optional - Wheat Thins spinach crackers. 

Cut tomatoes in halves. Add some goat cheese and basil a splash of the balsamic vinegar and olive oil, then add more tomatoes and repeat. Finish off with grated parmesan cheese and fresh basil. 

OPTIONAL Garnish the border with olives and enjoy.
